Dried salt fish (Bakayawo)
250g dried salt fish (bakayawo)
3 ripe tomatoes, skinned and chopped
1 large onion
2 tbsps. Oil
1 green pepper, seeded and sliced.
250 ml water
1 tbsp puree
mixed herbs
Method
1. Soak the salt fish for about an hour before cooking to remove excess salt, or soak overnight.
2. Wash the fish, rinse thoroughly and dry well.
3. Fry the onion in margarine until soft, add chopped tomatoes, then green peppers, mixed herbs, puree, salt and pepper(to taste).
4. Add water and cook for a few minutes.
5. Place the fish in the sauce and cook on low heat until the fish is cooked for about ½ hour.
6. When cooked, serve with sadza or rice or potatoes, with other vegetables.
