Fried flying ants (termites)
When the first rain comes the male ants leave their nests to seek females and the air is filled with flying insects. They settle on the ground and drop their wings and can then be easily caught.
Method
1. Collect the insects into a bowl discarding the wings.
2. Wash and dry.
3. Heat a little oil in a large pan over a high heat.
4. Shallow fry the ants until crisp and golden brown (this should take about 5 minutes).
5. Serve as a snack or as nibbles.
