Mealie Meal Sadza
(Although proper Mealie Meal may be available in some specialist markets or outlets, Polenta is a good substitute. However, the finished product will then be yellow, rather than white).
4 cups of water
2-3 cups of mealie meal or ground rice or polenta (add or reduce depending on the consistency required)
Method
1. Boil three cups or enough water in a saucepan or Sadza pot.
2. Make a paste using some of the meal with a cup of water, add to hot water.
3. Stir with a wooden spoon until it thickens like porridge.
4. Cover the pan and simmer for 10-15 minutes.
5. Remove the lid and gradually add more mealie meal stirring all the time and beating out any lumps that may form.
6. Continue to add and stir until the Sadza thickens to the required consistency.
7. Cover and reduce the heat until very low.
8. Leave for a few minutes to allow further cooking.
9. Stir the Sadza once again before serving.
